Freeze drying is the process of pre cooling and freezing a substance rich in moisture into a solid, and then sublimating its moisture from the ice state to the vapor state under vacuum conditions for dehydration, the substance itself remains in the frozen ice shelf, so its volume remains unchanged after drying and becomes loose and porous. As freeze-drying is carried out under vacuum (with minimal oxygen) and low temperatures, some easily oxidizable substances are protected, and many heat sensitive substances such as proteins and microorganisms do not undergo denaturation or loss of biological activity.
